Ingredients

  • 250 gram sweet potato
  • 2 eggs
  • 2 tsp vanilla extract
  • 160 grams olive oil
  • 160 grams honey
  • 1 tsp baking powder
  • 1/2 tsp Bi Carb Soda
  • 2 tbsp protien powder
  • 80 grams cacao powder
  • 2 tbsp Coconut Flour

Recipe's preparation

  1. Pre heat oven to 180c, grease & line square 20cm x 20cm tin.

    Add Sweet Potato to mixing bowl, grate 8sec/sp7 or until fine.

    Add eggs, vanilla, olive oil, honey, mix 5sec/sp4.

    Add baking powder, bi carb, protein powder, cacao & coconut flour, mix 5sec/sp4

    Pour into prepared tin and bake for 25 -30 minutes, remove from oven and rest in pan for 5 to 10 minutes before cooling on a cake rack.

Tip

This can be prepared in the TM31 also.

Replace cacao powder with cocoa if needed.

    a lovely brownie, not too heavy or sweet. I added 100g of chopped up nuts (macadamia, almonds and cashew mix), and that was spot on.

    Nice fudgy and filling brownies.  I used cocoa powder and ground linseeds instead of protein powder and baked in a ring tin for 30 mins to ensure even baking.
