Ingredients
Batter
- 1/2 cup Olive oil or coconut oil
- 1 1/2 cups raw sugar
- 2 tsp Vanilla Essence or Paste
- 2 cups Self Raising Flour
- 1/2 Cup cacoa powder
- 2 Cups Shredded Zucchini (approx 2)
Icing
- 1/2 Cup icing sugar
- 2 tbsp cacoa
- Coconut to sprinkle
- 1 tsp water

Preheat oven to 180 Degrees
Place Zucchinni into thermomix and blitz on 7 for 3 seconds transfer to a clean bowl for later.
Put oil, sugar and vanilla essence into bowl speed 5 for 60 seconds or until combined and smooth.
Add Flour and Cacoa mix speed 4 for 40 seconds. The mixture will look dry this is normal.
Add Zuchinni mix speed 2 reverse for 30 seconds. Scrape down sides. You may need to mix again if not fully combined.
Spread into slice tray and bake for 15-20 mins until a skewer inserted comes out with some moist bits on it. The top should look cooked
Fully cool before icing.
Combine Icing sugar and Cacoa with water.
Mix speed 3 for 10 seconds
Spread on cool Brownie and sprinkle with coconut.

My kids had no idea that zucchini was in this, stunned silence when I told them. The zucchini held the moistness in the brownie perfectly! So chocolatey, I love it!
