  • 2 green apples, Peeled, cored & quartered
  • 1 zucchini, Peeled & roughly chopped
  • 2 eggs
  • 100 g vegetable oil
  • 1 tsp vanilla extract
  • 250 g Self Raising Flour
  • 80 g brown sugar
  • 1 tsp cinnamon

Recipe's preparation

  1. Preheat fan forced oven to 160 degrees. Line a 12 cup muffin tin with cupcake cases. 

  2. Add apples and zucchini to TM bowl. Grate for 3 seconds/speed 7. Scrape down sides of bowl & repeat (3sec/sp7). 

  3. Add eggs, oil & vanilla. Mix for 10 seconds/Speed 4. 

  4. Add flour, sugar & cinnamon. Mix on Counter-clockwise operation"Counter-clockwise operation" / Speed 3 until just combined. Do not over mix or muffins will be tough. 

  5. Divide mixture evenly among 12 muffin cases and bake for 20-25 minutes or until a skewer inserted into muffin comes out clean. 

Tip

Once cooled, wrap individually and freeze for a healthy lunchbox addition.

    So yummy! I swapped out the Zucchini(didnt have any) for a banana and used wholemeal flour and they were delicious.

    Awesome muffins thank you! 5yo loves them. I reduced sugar to 60g and still very tasty.
    After freezing them and thawing again I reckon they were even moister than when fresh!Smile

    The kids LOVED them. I don't bother peeling the zucchini or apple - more fibre and you don't taste it. On kids request I put chunks of apple into the second batch. So good!

    So moist, even with stoneground wholemeal flour. You can taste the apples and zucchini but they are still wonderfully sweet.
