- 1 Fresh pineapple
- 2 Bananas ripe
- 100 grams walnuts
- 2 eggs
- 150 grams raw sugar
- 250 grams Self Raising Flour
- 150 grams sunflower oil
- 50 Coconut
- 1 tsp Ground Coriander
- 1 tsp ground cinnamon
- 1 tsp mixed spice
Icing
- 100 grams Creamed cheese
- 50 grams Butter
- 1 tsp vanilla
- 200 grams icing sugar
- Toasted coconut shredded, to garnish

Preheat oven to 180°C
Grease & line base of 23cm cake pan.
Place Pineapple, Banana & walnuts into bowl.
Chop 5 sec Sp.6
Add flour, sugar, coconut, eggs, oil & spices to bowl
Mix 30 sec Sp.4
Spread into prepared pan & bake in oven for 55-60 mins
Place on cooling rack & set aside to cool.
Place cream cheese, butter, vanilla & icing sugar into bowl
Blend 30 sec Sp.6 Scrape down sides & repeat 30 sec Sp.6
Spread on top of cooled cake, Garnish with Toasted coconut
