Ingredients

Shortbread

  • 250 g Butter, Roughly chopped
  • 55 g rice flour, Mill rice for 1min/speed 9
  • 80 g Caster Sugar (or milled from raw)
  • 320 g plain flour
  • 5 g vanilla essence

Recipe's preparation

    Traditional Shortbread
  1. 1. Place all ingredients in TM bowl, mix 17sec/speed 6. Check that it is mixed and resembles fine breadcrumbs.

    2. Knead 30sec/Closed lid"Closed lid" /Dough mode"Dough mode"

    3. Press into lamington tin (28cm x 18cm) lined with baking paper. Cut lines for 32 portions, prick with fork.

     

    4. Bake for 40min in preheated oven 150*C or until light golden brown.

     

Tip

Before baking, you can sprinkle a little extra caster sugar on top, for slightly sweeter shortbread.

Baking paper can be wet to shape in lamington tray, let dry a bit before pressing mixture into tray though.

    I too, always thought it would be difficult to cook a great shortbread, especially as my Mum is Scottish! This is a great and very easy recipe and get’s 5 stars from me. Second “Hunters” recipe for me and i’ll be searching for more. 👌🏻
