Ingredients
Janine's Hot Choc Biscuits - Thermie and Friends
- 240 g unsalted butter
- 200 g castor sugar
- 2 eggs
- 1 tsp vanilla
- 240 g plain flour
- 60 g cocoa powder
- 3/4 tsp bicarbonate of soda
- 1/4 tsp salt (or use salted butter)
- 1 packages mini marshmallows
- 200 g choc chips

- Preheat oven to 180 degrees
- Add room temp butter and sugar to tm jug and mix 3 mins speed 4 (stopping occasionally to scrape down the sides)
- Set speed to 3 and add eggs one at a time through the hole in the lid. Then add vanilaa and salt. Stop scrape down sides and mix speed 3 till combined
- Add flour, cocoa and bicarb, mix speed 4 for 15 seconds. Scrpae down sides and repeat.
- Place mixture in a separate large bowl and stir through mini marshmallows and choc chips. (mix will be quite sticky)
- OPTIONAL - also add shredded coconut and raspberry lollies for a rocky road flavour
- Place spoonfuls on baking trays lined with paper. Leaving enough room for biscuits to spread during cooking. Cook for 10-12mins until done. Let them cool completely on the tray before removing as they will be very soft.
Cooled biscuits will be soft and chewy and delicious - enjoy!
