Ingredients

White Chocolate and Cranberry Biscuits

  • 240 grams plain flour
  • 1 1/2 teaspoons bicarb soda
  • 50-100 grams brown sugar
  • 50 grams desicated coconut
  • 150 grams Butter, chopped
  • 1 egg
  • 70 grams dried cranberries or craisins
  • 100 grams white chocolate bits

Recipe's preparation

    White Chocolate and Cranberry Biscuits
  1. Pre-heat oven to 160 degrees.
  2. Place butter and sugar into bowl and cream together for 1 minute on Speed 3.
  3. Add the rest of the ingredients, except the choc bits and cranberries. Mix for 10 seconds on Speed 4. Scrape the sides of the bowl.
  4. Add choc bits and cranberries and mix for 10-20 seconds on Reverse, Speed 3, or until combined.
  5. Roll tablespoonfuls of mixture into balls. Place on prepared trays, 5 cms apart.
  6. Bake for 12-15 minutes or until golden.
  7. Cool on trays for 5 minutes. Transfer onto wire racks to cool completely.

    n-bellish:I made these today and had the same problem you did. They were inedible and i was supposed to be serving them to people. Thanks for the tip with the SR flour, ill give that a go now

    These were lovely albeit very sweet.  They didn't last long and were enjoyed by all.

    I don't know what I did but all we could taste was the bi-carb and this made them inedible... I was so disappointed and used the correct measurements. Has anyone else had this issue???

    Tried them again and just replaced the plain flour and the bi-carb with self raising flour and they worked a treat.

    I agree, Madee, now we don't have as much sugar in my baking. I've cut the sugar in half now!

    Love them but WAY too much sugar for my taste. I put 90g of sugar and thought they were perfect. great recipie with wonderful flavors and texture. Thank you
