Ingredients

  • 290 grams castor sugar
  • 2 egss
  • 1 lime zest
  • 250 grams Butter
  • 140 grams self-raising flour
  • 175 grams plain flour
  • 160 grams dessicated coconut
  • 11/2 cups icing sugar
  • 1 lime juice
  • 1 knob of butter

    Lime Coconut Kisses
  1. Method


    Preheat oven to 180 degrees.


    Place zest of one lime in TM and grate on speed 8 for 20 secs. Remove from TM bowl.


    Mix sugar and butter on speed 6 for 20 secs. Scrape down sides.


    Add eggs and mix on speed 4 for 40 secs.


    Add flour, coconut and lime zest. Mix for 1min, closed lid, interval speed. If not combined repeat for another minute.


    Place dessertspoon full on greased trays.


    Cook for 15mins.


    Icing


    Mix butter, icing sugar and lime juice together until smooth. add more lime juice if necessary.


    Ice together cooled biscuits.

    These biscuits spread alot so mine turned out enormous, which was not a bad thing as the boys loved them. My batch made just over 60 biscuits. They have a delicious definite lime flavour which we like. Great recipe to use up so many limes at the moment.
