Ingredients

milk

  • 250 grams Milk, cows, almond or coconut
  • 40 grams Desiccated Coconut
  • 40 grams Shredded coconut
  • 180 grams raw sugar
  • 100 grams almonds
  • 2 tablespoons ground rice, or 1/3 cup stale bread crumbs
  • 1 lime zest
  • 4 large eggs
  • 1/2 teaspoon Vanilla Essence/ Extract

Recipe's preparation

  1. 1. Place coconut in a bowl. Add boiing milk. Stir and leave for 25 mins.

     

    2. Use simmering basket to drain any milk that hasn't been absorbed.

    3. Clean and dry bowl. Add butterfly whisk. Add room temperature egg whites to TM bowl. Add a pinch of salt. Beat 2-3 mins/speed 3.5 until stiff peaks form. Remove whisk and transfer into a clean bowl.

    3. Mill rice 1 min/speed 9.

    4. Add almonds, lemon zest and raw sugar. 15 secs/speed 9.

    5. Add coconut mixture (and bread crumbs if using them instead of ground rice). 10 secs/speed4/reverse.

    6. Add egg yolks and vanilla. 10 secs/speed 4/reverse.

    7. Fold through egg whites 15 secs/speed 2/ reverse.

    8. Pour into a 20cm lined and floured cake tin.

    9. Bake 160 degrees for 30 mins.

    10. Turn oven to 150 degrees and bake a further 30 mins or until firm. Check after 15 mins.

    11. Decorate with sifted icing sugar. Serve with tropical fruit, berries or delicious with mango lassi.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
