Ingredients
Cake
- zest from 2 lemons
- 120g sugar, or your chosen sweetner- I use coconut sugar
- 125g Butter
- 2 eggs
- 250g sour cream, or plain yoghurt
- 50g lemon juice, peel the zest off before juicing to use zest in cake
- 380g SR flour, or your chosen flour eg spelt
- 1/2 baking powder
Passionfruit Syrup
- 50g sugar
- 150g water
- 40g fresh passionfruit

I'm cooking this todayRecipe's preparation
Preheat oven to 180 degrees.
Place lemon zest & sugar into TM bowl chop for 10 secs speed 10. Add all remaining cake ingredients & chop for 10 secs speed 5, scrape down bowl & repeat.
Place mixture into a greased 24cm cake tin. Bake for 40 mins or until cooked through.
While cake is in the oven place all the syrup ingredients into the TM bowl & cook for 10 mins 100 degrees
"Counter-clockwise operation" speed 1. MC off & basket ontop.Allow cake to cool slightly for 5 mins & pour half the syrup over the cake.
Delicious served warm with extra syrup & whipped cream!!
