Ingredients

Cake

  • 225 g Butter, softened
  • 225 g caster sugar
  • 4 eggs
  • fine zest of 1 lemon
  • 225 g Self Raising Flour

Lemon Drizzle

  • 1 1/2 lemons, juiced
  • 85 gram caster sugar

Recipe's preparation

    Cake
  1. 1. Heat Oven 180C (160C fan forced)

    2. Beat butter and caster sugar 30seconds/speed 5

    3. Add eggs one at a time with blades running

    4. Add flour and lemon zest Mix 30sec/speed 5

    5. Add mixture to a greased, lined loaf tin.

    6. Bake 45-50 minutes until skewer inserted in middle comes out clean

    7. Cool cake in its tin

     

  2. Lemon Drizzle
  3. 1. While cake is cooling, mix caster sugar and lemon juice

    15 seconds/speed 4

    2. Prick cake with a skewer all over

    3. Pour over the drizzle and leave in tin to cool. Drizzle should form a crisp topping.

    4. Keeps in an airtight container for 3-4 days or freeze for 1 month.

    One of the best cake recipes ever! I swapped out the butter for coconut oil and added 1tsp vanilla. I also put the lemons rind (peeled with a veggie peeler) into the bowl with the raw sugar preceding the recipe and made caster sugar. I served the cake as a dessert with cream. Everyone loved it including my non-cake-eating son!

    Really yummy cake. In my experience tastes better after a day or two. I turn it upside down out of the tin and leave it upside down to allow the syrup to soak back through again - gives a more even consistency. Thank you for this recipe. 😁

    Lovely, I like the reduced amount of butter and sugar. I used half coconut sugar, just because I have it.. Cake turned out a lovely caramel colour.
