- Preheat oven to 180 degrees celcius. Grease and line loaf pan.
- Cream butter, sugar and rind, 20 seconds/speed 2. Scrape down and repeat.
- Add eggs and mix in 10 seconds/speed 3.
- Add flour and milk. 10 seconds/speed 2. Mix/fold in a little with the spatula. Repeat.
- Spoon into loaf pan. Bake 45 to 50 minutes. Until skewer comes out clean.
- Combine sugar and lemon juice. 15 seconds/speed 3. Pour over hot loaf while still in pan. Stand in pan until cooled.

Really Lovely loaf, I did 150g sugar (blitzed at The start) with juice of a lemon, next time I’d add rind of two lemons. So yummy.h
Also for the final mix, it was still a little lumpy so I increased it to speed 4.5 for a few seconds until it looked smooth.
Loved this easy recipe. I halved the sugar and put the squuezed lemon into the mixture, instead of putting on top.
Great recipe - thank you. I only used 130g sugar in cake and was sweet enough. Was well browned in my oven after 45 mins. Will cook for 40 mins next time. Really yummy though.

i used 150g sugar for the cake and 40g lemon juice and 80g sugar for the glaze. I upped some of the mixing speeds as the ingredients weren't mixing at speed 2.

Beautiful lemon loaf. I halved the sugar in the cake and slightly reduced it in the syrup. Less sugar enhanced the lemon zing even more. Thank you for a great recipe.

Made this for work morning tea, used butter milk left from butter making. Was very moist & lemony. Disappeared very quickly so think it was a hit.
