Ingredients

Risotto

  • 4 spring onions, green part only
  • 3 sprigs rosemary, leaves only
  • 20 grams garlic infused oil
  • 400 grams Italian aborio rice
  • 100 grams white wine
  • 4 chicken thighs, trimmed, sliced
  • 1100 grams water
  • 2 tablespoon low FODMAP vegetable stock paste
  • 50 grams lemon juice
  • 100 grams Parmesan cheese, grated
  • Handful Baby Spinach Leaves

Recipe's preparation

  1. Put onion and rosemary in bowl and chop 5 seconds/speed 7.  Scrape down sides with spatula.  Add oil and sauté 3 minutes/Varoma/speed 1.

     

  2. Insert butterfly and add rice.  Cook 2 minutes/Varoma/Counter-clockwise operation"Counter-clockwise operation"  speed 1

     

  3. Add wine and chicken, cook  1 minute/Varoma/Counter-clockwise operation"Counter-clockwise operation" speed 1.

     

  4. Add water, stock and lemon juice. Cook for 17 minutes/100 degrees/Counter-clockwise operation"Counter-clockwise operation" speed 1. Replace MC with simmering basket on top of lid.

  5. Place spinach in Thermoserver, pour risotto on top and stir through with cheese.  Rest in server 10 minutes with lid on before serving to allow for more absorption.

    Wow sorry but this recipe was a disaster Cry followed it exactly... had to tip out half the liquid and the end of cooking time and add extra cooking time... so much spluttering and mess... ended up with a huge jug full of mush

    This is great. My daughter is low fodmap and I had been making two meals every night but this is one we all enjoyed tmrc_emoticons.) I only had 15g lemon juice and still great.

    This was delicious risotto. Only added 600gm liquid and it was perfect.  I am Low FODMAP and I love that there are recipes now for that.  I added 300gm chicken stock (Thermo recipe) and 300ml water as I didn't have any vege stock. I will have to make the low FODMAP vege stock now.

    From step 4 onwards, I could not for the life of me get the butterfly whisk to stay in. Is it supposed to be kept in the whole time?

    The texture of this dish is amazing! So creamy. I made this tonight for my family, my husband requires low fodmap foods. I did however make the following tweaks/omissions to the recipe:** I could only fit 600g of water into the bowl (to fill it up to the max marker), then as cooking went on I was able to fit in another 200g. ** I only added 20g of lemon juice, was all I had.** Omitted parmesan cheese for my family's taste preference. ** I also found this recipe made way too much to fit into any thermoserver I have, so I just used a large mixing bowl for the final step.
