Ingredients

Mixture

  • 15 g Chia, (I like the black ones to make a poppyseed type effect but either is ok)
  • 70 g water
  • 80 g raw sugar
  • 85 g white chocolate
  • 300 g Self Raising Flour
  • 3 slices Lemon ring
  • 90 g lemon diced (seeds and pith removed)
  • 170 g Milk
  • 95 g coconut oil

Recipe's preparation

    Preperation method
  1. Add chia and water together into a bowl and set aside so that they can gel together, about 5 mins.

    Preheat oven to 200 degrees

    Cut off rind off the lemon- I usually do a couple of strips depending on the lemon scent and my mood. Once you have the strips, turn tmx onto sp 7 and drop the rind through. Once chopped finely, scrape down sides and put rind aside for later.

    Place raw sugar into TM bowl and mill sp 9 3 secs.

    Add white choc, Sp7, 3 sec (or longer depending on how chunky you like it!)

    Add 300g self-raising flour into the TM bowl and mix Sp 3, 5 sec.

    Place chia gel, milk and coconut oil into the TM bowl and mix Speed 4, 5 seconds.

    Add lemon rind and lemon chunks last, you just want to mix them through roughly- sp 5, 4-5 seconds (although how juicy your lemon is may impact on this)

    Spoon into lined muffin pan. The mix will be quite thick and dough like, make sure you push down your mix into the pan.

    Bake for 15-20 minutes until golden and firm to touch.

    Very nice lemony muffins.  Quite dense yet moist enough.   Somehwhat by mistake, I used 250 gm Greek yoghurt rather than milk and all went well.   This was the first time I have used soaked chia sees instead of eggs & I'll do this again when I don't have any eggs.  Thank you for the recipe.
