Ingredients

Coucous Crust

  • 60 g water
  • 45 g couscous
  • 20 g Parmesan cheese
  • 1 teaspoon thyme leaves, chopped or dried

Meatloaf

  • 1 Spanish onion, Quartered
  • 1/2 zucchini, Quartered
  • 4 garlic cloves
  • 40 g spring onion, Chopped
  • 50 g sundried tomatoes, Drained
  • 1 tablespoon Thyme
  • 1 bunch Basil Fresh
  • 2 Bacon rashers diced
  • 400 g Chickpeas, Drained (but keep the brine/aquafaba)
  • 50 g Parmesan cheese, grated
  • 40 g Chickpea Brine Aquafaba
  • 350 g tomatoes, Chopped
  • 500 g Beef mince

Recipe's preparation

    Meatloaf
  1. Preheat oven to 180 degrees

    Add onion, zucchini, garlic, spring onion, basil and sundried tomatoes, 5 Seconds, speed 6 to chop finely and scrape down.

    Add bacon chopped and cook for 2 minutes, 100 degrees, reverse speed 1 1/2 and scrape down

    Allow thermomix to cool and whilst doing this add in a seperate bowl water and couscous, stirring occassionally so it can thicken for later use.

    To thermomix bowl, add grated parmesan, chickpeas (blended fine already) and chopped tomatoes. Blend together for 10 seconds, speed 5.

    Add beef mince and blend on reverse setting for 30 seconds speed 4 so that the mince is evenly mixed. Pour mix and pack firmly into a spring pan and bake for 20 minutes. Whilst baking mix Couscous crust together and once semi baked, spread crust across the top of the meatloaf and bake for a further 10-15 minutes.

     

    Serve with your prefered condiment- tomato sauce, gravy etc etc
