Ingredients
- Ingredients Cake Mix
- 180 gpitted dates
- 1 tsp bicarbonate of soda
- 250 g water
- 2 apples, quartered
- 250 g raw sugar
- 120 gsoftened butter
- 1 egg
- 1 tsp vanilla essence
- 220 g plain
- Topping
- 130 g brown sugar
- 60 g Butter
- 70 g Shredded coconut
- 40 g Milk

Preheat oven to 180C
Place dates into TM Bowl and chop for 6 seconds speed 7
Add water and cook 100C for 5 minutes on speed 1
Mix 10seconds on speed 4
Add Bicarb and stir for 3 seconds on speed 2
Put in a bowl and set aside
Put apples in TM bowl and chop for 4 seconds on speed 7
Set aside
Clean and dry bowl
Put sugar into TM bowl and pulverise for 20 seconds on speed 9
Insert butterfly
Add softened butter and mix for 10seconds speed 4. Mix for 1.5 minutes on speed 4 adding the egg and vanilla essence. Remove butterfly.
Add flour 20 seconds speed 5 and then date mixture and apple1 minute reverse speed 5
Spoon into 20cm base-lined cake tin and bake for 40 minutes or until top is set
Topping
Meanwhile place all topping ingredients in TM bowl cook 60C 2 minutes speed 4
Remove cake from oven
Spoon over topping and cook 20-30 minutes or until topping is golden and cake cooked through
Remove from oven and cool in tin

Very runny & didn't set very well, but it's great as a pudding
This was my first thermie cake and I LOVED it!
I was really disappointed with the end product. Processing the apples for that long just resulted in mush and the dates too were over processed. and the end result was a stodgy cake.
This is usually a lovely cake with great texture and caramel flavour. My suggestion is cut up the dates and apples into chunks pour the bioling water over the and stand for 20 mins. Mix the cake batter and then fold in the apples and dates..
The best way of getting the coconut spread evenly is to just sprinkle over the cooked cake, cook the milk and butter topping with the sugar in the thermomix and pour over the coconut
I have found that often ingredients are overprocessed when the Thermomix is used just for the sake of using it !
