Ingredients

Lunchbox Chocolate banana Muffins

  • 3 pieces very ripe Banana, in pieces
  • 120 gram butter of choice
  • 80 g Milk of choice
  • 1/2 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • 180 g plain flower (or gf)
  • 3 tbsp cocoa powder
  • 1,5 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 100 g Coconut sugar
  • 90 g chocolate chips (optional)

Recipe's preparation

  1. Preheat the oven to 180 degrees
  2. Place butter in bowl. Closed lid"Closed lid" Melt butter 5 minutes 60 degrees speed 2
  3. Add bananas and milk, Blend"Blend" for 10 seconds speed 8.
    Scrape down bowl.
  4. Add vinegar, vanilla, flour, cocoa, baking powder and baking soda, cinnamon, sugar and Mix for 10 seconds speed 4. Scrape down sides and add chocolate chips.
  5. Pour mixture into muffin tin.
  6. Bake for 20-25 min until skewer inserted comes out clean. Leave to cool for a minimum of 20 minutes before removing from tin.

    Store up to a week in fridge. Or pop them in a zip lock bag in the freezer and take one out as you are making lunch boxes in the morning.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
