- 100 g coconut oil
- 80 g Butter
- 40 g cacao powder
- 140 g raw sugar
- 2 eggs
- 140 g rice flour
Topping
- 250 g cream cheese
- 80 g raw sugar
- 2 drops vanilla extract
- 1 egg

1. Preheat oven to 170degC convection oven OR 150degC fan forced oven. Grease and line with baking paper a 28cmx18cm slab pan.
2. Place raw sugar from both base and topping (220g) into bowl and mill for 5 seconds speed 9. Set aside.
3. Place butter and cacao in bowl and melt for 1 minute 100deg speed 3.
4. Add coconut oil, 140g reserved caster sugar, 2 eggs and rice flour and mix for 7 seconds speed 3. Press this mixture into pan. Clean bowl.
5. Add cream cheese, remaining caster sugar, vanilla extract and egg to bowl and mix for 10 seconds speed 4.
6. Pour over chocolate mix in pan and gently swirl through. Bake for 30-35 minutes or until skewer comes out clean. Cool in pan before cutting into pieces.
