Ingredients

Marzipan

  • 200g Almonds
  • 200g Caster Sugar
  • 1 large beaten egg

Cakes

  • 100g milk
  • 2 eggs
  • 60g golden syrup
  • 300g Self Raising Flour
  • 1/4 tsp baking powder
  • 1 tsp mixed spice
  • 120g butter
  • 120 g brown sugar
  • zest 1/2 lemon
  • Zest 1/2 orange
  • 300g mixed dried fruit ( soaked in 1/4 cup brandy overnight) or left over Christmas fruit mince
  • Pinch salt

Recipe's preparation

    Marzipan
  1. Place whole almonds in TM bowl and mill 10 seconds/ Speed 9

    Add sugar and mix 4 seconds/ speed 5

    Add egg through whole in lid  while mixing at speed 5/ 10 seconds

    Mixture should be soft and slightly sticky. Set aside in fridge while preparing cakes.

  3. Heat oven to 175 Degrees C

    Place milk, eggs, and golden syrup in TM bowl - mix 5 seconds/ speed 5. Set aside.

    Place flour, butter, baking powder, mixed spice in TM bowl.  Mix 5 seconds/ speed 5.

    Add brown sugar, zest, and dried fruit, salt, and reserved liquid    mix onCounter-clockwise operation"Counter-clockwise operation" 10 seconds / speed 3

    Mixture should be soft and not runny dropping easily from spoon.

     

    Put half the mixture in the muffin cases. I used the silicon Thermomix Muffin cases - no mess and comes out easily.

    Next take 1/4 of marzipan mixture and roll out. Cut a circle shape the diameter of the  mini cake and place on top.  Add the rest of the mixture to each mini cake.

     

    Bake 20 minutes  or until turning golden,

     

    Cool before adding marzipan acing.

  6. Roll out marzipan to 2mm thickness using a circle cutter place on top of each cake.

    Next roll balls of marzipan and arrange 11 on top of each cake. Place under a hot grill or use a blowtorch  to heat the marzipan until it is lightly browned.

  7. Grilled and ready to eat

Tip

In keeping with Easter theme I have made a traditional Simnel Cake, but in minature form.

Simnel Cake is an Easter tradition- a spicy fruit cake - which includes marzipan. There are 11 marzipan balls on the top representing the Apostles minus Judas.
