Ingredients

Muesli Bar

  • 250 g Butter
  • 180 g caster sugar
  • 2 tbsp golden syrup, or honey
  • 190 g rolled oats
  • 50 g flaked almonds
  • 30 g Shredded coconut
  • 30 g corn flakes
  • 1 tsp mixed spice, optional
  • 160 g mixed dried fruit, (ie craisins, sultanas, pitted prunes)
  • 100 g dried apricots

Recipe's preparation

    Muesli Bar
  1. Preheat oven to 160 degrees fan forced.

    Place apricots and mixed dried fruit into TM bowl and pulse on TURBO 3 times. Set aside.

    Place sugar into TM bowl and mill 5 secs on 10 if starting with raw sugar to make caster sugar. Scrape down sides and around bottom of TM bowl.

    Add butter and syrup and optional all spice  and melt and combine at 60 degrees for 30 seconds on speed 3.

    Add all other ingredients and combine with Reverse for 45 seconds on speed 1.5

    Line a 20*30cm deep baking tray or roasting pan.

    Place mixture into tray and flatten down evenly. Press down with the back of a spoon.

    Bake at 160 degrees for 40 minutes.

    Let the slice cool down in tray before removing and cutting. Top layer is best cut with a bread knife, then cut through with a normal knife.

Tip

You can add chocolate chips to the mix or press them into the top before baking. If the muesli bar is not for school, then you may also add a handful of chop nuts of your choice.

    I had to turbo about 5-6 times to chop the fruit.  Also needed to repeat the butter-syrup melting step twice.  I think it needed 1-1.5 minutes on this step. 

    Mine did not set in the pan in the middle but overdone on the edges.  May be due to the fact  I reduced the butter to 200g & the sugar to 100g.

    Wow, wow, wow! Yummy! Baby, kids and grandparents loved this. Sweet treat for all ages. I used dried fruit including cranberries, and dates but no coconut. Substituted hazelnut meal for nuts And drizzled with chocolate on top tmrc_emoticons.)  Made 2days ago and all requested to make again so here I go. thanks for the recipe. 2 thumbs up!

    Yummy recipe. Easy too!

    There's a lot of flexibility to add your own touches but I agree that you could reduce the butter and sugar content - especially if you're using dried fruit like dates/sultanas that are already quite sweet.

    OMG, kids love it!

    We used dates, apricots and sultanas and added more corn flakes in lieu of almonds. Mixture tasted amazing and kids want this every week now! Thanks for the recipe! Cooking 7

    Just made these - delicious! However, next time I will reduce the butter and sugar, as they are a bit too rich to eat more than a small piece. I used dates which I think added to the sweetness.

    have just made these tmrc_emoticons.) I also halved the butter and sugar. I used fruit melady & no extra apricots, & puffed rice.

    250 grms of butter was way too much, I could have  run my car on the oil in the baking pan! Sorry but I will cut it down to 150grm as others suggested as I liked the remainder of the ingredients. tmrc_emoticons.)

    Not sure what I did but the mix was really loose when I put it in the tray- burnt before the 40 minutes ( most likely my oven tho)
