Ingredients

Cake batter

  • 180 g Carrot's, Chopped into pieces
  • 180 g flour, cake, self raising flour
  • 1 tsp bicarbonate of soda
  • 1.5 teaspoons cinnamon
  • 150 g caster sugar
  • 160 g oil, (Any, but preferably Veg)
  • 3 eggs
  • 1 tsp vanilla essence
  • 50 g walnuts
  • 1 level teaspoons salt

Frosting

  • 60 g Butter, Room Temp
  • 112 g cream cheese, Full Fat
  • 1 tsp vanilla essence
  • 250 g icing sugar

Recipe's preparation

    Cake
  1. Preheat oven to 180 Degrees and line an 20cm round cake tin.


    Place all ingredients in the bowl and chop Sp 5/ 10 Secs

    scrape down sides and repeat the above step

    Pour batter into the cake tin and bake for around 45-50 mins. Check its cooked by poking a skewer into the middle, if it is cooked it will come out clean


    For the frosting


    Put all ingredients into bowl and mix on sp 4 for about 20secs
    Scrape down sides and repeat if necessary

    Spread onto completely cooled carrot cake

    decorate with toasted coconut, crushed nuts or orange zest swirls

Tip

Unfrosted cake freezes well

Batter can be used to make 12 muffins instead of one cake

Like your nuts crunchy? mix all cake ingredients except the nuts. stir them through with the spatula immediatley before baking
