Ingredients

Base Mixture

  • 125 grams white sugar
  • 125 grams Butter
  • 225 grams Plain Flour.
  • 1 level teaspoon Baking Powder.
  • 1 egg
  • 1 pinch salt

Filling

  • 100 grams white sugar
  • 110 grams soft butter
  • 140 grams Condensed milk.
  • 50 grams lemon juice

Icing Glaze

  • 350 grams white sugar
  • 2 tablespoon cocoa

Icing

  • 250 grams white sugar
  • 2 tablespoon dark cocoa powder

Recipe's preparation

    Base Mix
  1. In a clean bowl add white sugar 10 secs speed 8 

    add butter cream 20 secs speed 8.5  scrape down sides 

    add egg 10 secs spped 7  scrape down sides 

    add flour, BP, salt mix 6 secs speed 6

    tip onto a TM mat and bring together into a ball. 

    Wrap in clingwrap and chill for 20 mins.

    Unwrap onto an floured board and roll out thinly.

    Cut circles to fit upthe sides of patty tins. prick with a fork.

    bake 170 degrees for 10-15 mins

  3. Add sugar to a clean bowl. to make icing sugar 15 secs speed 10

    Add softened butter, condensed Milk and lemon juice

    Beat 6 secs speed 7  scrape down sides. Repeat

    Fill cooled patty cases 3/4 full 

    allow to settle

  6. put the sugar into a clean bowl and make icing sugar 15 secs speed 10

    Add 2 tblsp boiling water beat till a glaze speed 8, 5 secs

    this needs to be not too runny but dropping off a spoon

    Ice half the tart with white icing

    then with the remaining icing add the cocoa and blend 5 secs speed 8. 

    Ice other half with the dark icing 

    Leave to set

These do not have to be stored in a fridge and last for up to a week.

    Could I make the pastry cases for these tonight and then fill them either Friday night or Sat morning for a BBQ lunch on Sat?  Don't want them to go limp or stale
