Ingredients

Jam Drops

  • 120 g Butter
  • 110 g sugar, (milled to caster sugar)
  • 1 egg
  • 40 g honey
  • 160 g SR flour
  • 75 g plain flour
  • 55 g arrowroot/tapioca flour
  • 2 tbsp strawberry or raspberry jam

Recipe's preparation

    Jam drops
  1. Preheat over to 180C.

    Mill sugar to caster sugar if using raw sugar.

    Cream butter and sugar for 5s on speed 5.

    Add egg and honey and mix for 5s on speed 5.

    Add flours and mix for 10s on speed 4.

    Roll tablespoon sized balls and place on baking tray. Poke a hole in the the middle of each biscuit using the end of a wooden spoon. fill the holes with jam.

    Bake at 180C for 10-15 minutes until just golden.

Tip

Use homemade jam. Great for lunchboxes.

Nana McDonald was my maternal grandmother. She was a wonderful cook and I have very fond memories of eating giant jam drops in Nana's kitchen. She was a kind and loving woman and it brings me great pleasure to make her recipes in my thermomix.

    Delicious. I also used 55g custard powder in place of tapoica flour... I rolled them into 20 biscuits but i think I should've made them smaller, & made more as they rise/spread.

    The kids loved it.  I was trying to reduce the butter so I put in more soy milk to get the consistency right. Still worked!
