Ingredients

Nannas Sponge Cake

  • 45 g plain flour
  • 125 g cornflour
  • 2 tsp baking powder
  • 4 eggs, room temperature
  • 170 g caster sugar
  • 1 tsp vanilla bean, paste
  • 1 tbsp Boiling water
  • Jam and Cream, to serve

Recipe's preparation

  1. Pre Clean bowl with vinegar wash
  2. Grease 2 round cake tins with butter
  3. Preheat oven to 180-190 degrees
  4. Place plain flour, corn flour and baking powder into bowl and turbo 1 sec 6 times. Set aside
  5. Clean and dry mixing bowl
  6. Place bowl onto mixing bowl lid and weigh 170 grams caster sugar. Set aside.
  7. Insert butterfly whisk and add 4 eggs at room temperature.
    Mix Speed 4 for 1 minute MC on.
    Continue mixing for another 4 minutes speed 4 MC off.
  8. Set timer for another 3 minutes speed 4 and add vanilla and castor sugar one tablespoon at a time and continue mixing until all disolved.
  9. Add flour mixture and combine 1 minute reverse speed 1
  10. Add 1 tbsp boiling water down the side of the bowl and combine speed 1 reverse/20 seconds
  11. Pour mixture into prepared tins and cook in middle of oven for 20 minutes.
  12. Allow to cool then serve filled with Jam and Cream

Best served on day of preparation.
