- 160 grams sugar
- 4 eggs at room temperature
- 130 grams custard powder
- 1 teaspoon Cream of Tatar
- 1/2 teaspoon bicarb of soda
- 2 teaspoons Corn Flour

I'm cooking this todayRecipe's preparation
1. Preheat oven at 180 degrees.
2. Sift dry ingredients (Not Sugar) 5 secs/Sp 4. Remove from bowl
3. Grind sugar 5 secs/sp 9
4. Insert Butterfly and add eggs. Mix 7 mins/sp4
5. Set for /1 min and add dry sifted ingredients. After 30 secs press and continue. Mix for an extra 30 secs if required.
6. Pour into greased and lined tin (approx. 20cm)
7. Check after 20 mins but do not bake longer than 30 mins. Skewer will come out clean
Cake Batter
Tip
Rinse bowl and butterfly with vinegar and water before commencing
Top with Icing sugar and fill with whipped cream

I just made this sponge and it was lovely. I made a few adjustments but loved the outcome. I hand sifted the dry ingredients twice and sat them to the side (this is where 2 bowls would come in handy) I used caster sugar ground it and then added the eggs. I mixed the eggs and the sugar on 37°C for 8 minutes on speed 4. I then set the time for 1 minute speed 3 and sifted the dry ingredients through the measuring cup hole. Then scraped down the sides, and the top of the butterfly mixer and mixed a further 10 seconds on speed 3.

Delicious. Made a passionfruit icing (2c icing sugar + 1/4c passionfruit pulp) and added passionfruit pulp to cream too. Will definantly make it again. Thanks

I would mill my sugar.. Than put it to the side.. Tham put in my all ingredients but not the eggs, and mill them.. Than put the in a dish and clean out the bowl and dry.. Than add the egg whites one and mix till they peak.. Than slowly add the sugar over 5 mins.. Than add egg yokes.. Than fold in all the other ingredients.. And it should work than..
I have made this recipe for "Nanny's Birthday Sponge" Twice. THough I followed the recipe to the tee
and the taste was very good. I was over all not impresed. the mixture is heavy and falls to the bottom of the Lined Tin and forms a band of heavy stickey mix on the botton of the cake..it stays like that after its baked. though i must say the flavor is good and it dose rise well just spoiled by the stickey base . I may try again with a few changes.??
