- 300 grams Whole raw almonds
- 200 grams sugar
- 200 grams Whole orange, (approx 1 medium orange)
- 100 grams carrot, (approx 1 small-med carrot, unpeeled)
- 4 eggs
- 80 grams Gluten free plain flour, or cornflour
- teaspoon baking powder

- 1. Preheat oven to 180 degrees celcius. Lightly grease and line a spring form tin (I use 20cm).
- 2. Place almonds and sugar into TM bowl and mill for 15 seconds on speed 10. Set aside.
- 3. Place oranges/carrots into TM bowl and chop for 8 seconds on speed 5.
- 4. Add almond/sugar mix, eggs, cornflour and baking powder and mix for 10 seconds on speed 7, using spatula if necessary.
- 5. Pour the batter into prepared tin and bake for 40 minutes, using a skewer to make sure the cake is cooked. It can seem slightly moist but still springing back in middle.
- 6. Allow to cool for 10 minutes in the tin before turning out onto a cooling rack.
- 7. Serve warm or cooled with ice cream or yogurt.
Tip
This mixture could also be divided into small dariole moulds and steamed for 20-25 minutes in the Varoma. It would make 10-20 (depending on the size of your moulds) so you might prefer to halve the mixture.

I am wondering if I can you plain or self raising flour? I don't have any gluten free flour.
Loved this cake. Very easy. I iced it with orange and butter icing. 🙂
Great flavour and very easy. I think I overcooked mine slightly as it wasn't as moist as I expected. (My springform tin is 26cm and I still gave it 40 minutes). Still, would happily make it again. Even my non-orange eating daughter licked the plate clean!

Quick and easy and yum yum!
I used navel orange and I found it did not get chopped with the carrot that well. The orange was not very juicy so that may have been the dowlfall.The batter was very thick. I added the herbie's fragrant spice also but really did not feel it in the cake. Also, it needed an extra 15 minutes in my oven which surprised me - I used 180 C fan forced. Also, I used sorghum flour so that may have been another issue. I might try it again with spelt flour and see how that goes.
This cake is just lovely! Everyone wanted another slice! I added 3tsp of Herbies Fragrant Sweet Spice, it was delicious
Made this for the second time yesterday. Love so much not having to boil the orange. This time around I added 50gr chocolate milled to small chunks and loved this extra flavour with the other ingredients. In my head I now have the "healthy" version and the gourmet version. Thanks for posting. Another good reason to be loving my thermomix - only had it since April.
So yummy! I didn't bother setting aside the almonds - just kept them in and still worked perfectly well
Lovely cake, I had it by itself but I think as the recipe suggests, it would be super nice with icecream or whipped cream.
