Ingredients

Poached Quinces in Orange Syrup

  • 2 Quinces, peeled, cored and cut into quarters
  • 250 grams Sugar.
  • 200 grams water
  • 200 grams orange juice, (I used 6 Naval Oranges)
  • 1 cinnamon quill
  • 1 sprig thyme

Cake Mixture

  • 165 grams raw sugar
  • --- Zest of one orange cut in strips with a peeler
  • 250 grams Self Raising Flour
  • 125 grams softened butter
  • 80 grams orange juice
  • 3 eggs

Recipe's preparation

    Poach Quinces in Orange Syrup
  1.  

    1.Combine sugar, water, orange juice, cinnamon quill and thyme in a saucepan and simmer on low heat until sugar dissolves.

    2. Cut each quince quarter lenghtwise into about 1.5 cm thickness and add to saucepan and poach on low heat until soft - about 40 -50 minutes or until quince is turning pink and tender.

    3. Remove quince from saucepan with slotted spoon and place on a plate. Reserve poaching liquid!

    4. To make Syrup. Strain reserved poaching liquid through a fine mesh sieve and add to Thermomix bowl and cook for 10 minutes/Varoma Temp / speed 1.5

    5. Set syrup aside in serving jug

    6. Wash and dry thermomix bowl.

     

  2. CAKE MIXTURE

     

    1. Pre-heat oven at 180°C. Fan forced oven at 170°C

    2. Grease and line bottom and sides of 20cm cake pan with baking paper.

    3. Place Sugar and orange zest strips into Thermomix bowl and mill 10 sec/Speed 9.

    4. Add flour, butter, orange juice and eggs to Thermomix bowl and combine 30 Sec/Sp4. Scrape down sides of bowl and combine for another 10 Sec/ Sp 4.

    5. Pour batter into prepared cake pan and place sliced quinces decoratively on top of batter.

    6. Bake for one hour or until cake is cooked. (When cake skewer is inserted it should come out clean)

    7. When cake is baked, leave to stand in the pan for 10 minutes before turning out onto a wire rack to cool.

     

Tip

Serve Warm or cold with the Orange Syrup and a dollop of cream or vanilla yoghurt.
