- 220 grams blanched almonds, (raw work equally as well)
- 220 grams carrots, roughly chopped
- 75 grams dates
- 1 tsp sea salt
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp Nutmeg
- 1/4 tsp Cardamon
- 3 eggs
- 70 grams Maple syrup
- 25 grams almond oil or grapeseed oil
- 110 grams pecans
Frosting
- 100 grams coconut oil
- 75 grams Maple syrup

Preheat Oven to 160C and line muffin tray with cake papers
Place almonds in bowl and miil 6-8 seconds/speed 6. Set aside.
Place carrots in bowl and chop 5 seconds/speed 5. Set aside.
Place dates in bowl and puree 15-20 seconds/speed 8. Set aside.
Place maple syrup, oil and eggs in bowl and combine 3 seconds/speed 5.
Add almonds, carrots, dates and all other ingredients except peacans. Combine 5-8 seconds/speed 5. Scrape down sides and add pecans. Mix 3-5 seconds/speed 5.
Spoon into cupcakes and bake for 20 minutes or until a toothpick comes out dry.
Frosting
Place coconut oil and maple syrup in clean bowl. Mix 15-20 seconds /speed 5 or until combined and smooth. Spread on Cupcakes when cool and enjoy!
Method
Tip
These are fabulous cupcakes. You can replace the above frosting with a cream cheese frosting - no longer dairy-free but delicious.
Also TM5 can be used with this recipe.
