Recipe's preparation

  1. Preheat oven to 180 degrees and line 2 baking trays with baking paper.

    Mill raw sugar 2 seconds, speed 9.

  2. Add brown sugar, butter & vanilla. Mix 30 seconds, speed 6 until light and fluffy.

  3. Add eggs 1 at a time. 1st egg - 10 seconds, speed 5. 2nd egg - 10 seconds, speed 5.

  4. Add flour and baking powder. Mix 30 seconds, speed 6.  Use spatula through the hole in the lid to help stir the mixture if needed.

  5. Knead for 30 seconds, Closed lid"Closed lid" Dough mode"Dough mode"

  6. Place SMALL balls of dough onto prepared trays - leaving room for spreading. Balls only need to be just a tiny bit bigger than the size of a freckle.

  7. Press 1 freckle onto the top of each cookie.

  8. Bake for 12-15 minutes or until light golden.  Cool on trays for 5 mins, then transfer to a wire rack to cool completely.

Tip

This recipe should make approx 70 cookies.  Keep your dough balls small!  Also you may like to purchase a larger packet of freckles as I always run out when I buy the small packet... probably due to me eating too many in the process!

Suitable for TM31 also.  Instructions are exactly the same.

    Family loved these....there were a lot of cookies which is great for a large family. 1st batch didnt last long at all. This recipe is a definate keeper. Lol

    I don't think this recipe would be suitable to roll. You could choc dip after cooking!
