Ingredients

  • 125 gram Butter
  • 350 gram white chocolate
  • 200 gram plain flour
  • 100 gram caster sugar
  • 2 eggs
  • 50 gram roasted macadamias
  • 150 gram raspberries, fresh or frozen
  • icing sugar, for dusting

Recipe's preparation

  1.  

    Pre heat oven to 180ºC. Line square cake tin with baking paper, overlapping the edges.

     

    Place macadamias into TM bowl and chop for 2 seconds on speed 6. Set aside.

     

    Place chocolate into TM bowl and chop for 2 seconds on speed 6. Set aside. (You can

     

    leave half the chocolate in the TM bowl).

     

    Place butter and half the chocolate into TM bowl and melt for 5 minutes at 100ºC on

     

    speed soft. Cool slightly.

     

    Add flour, sugar, eggs, macadamias and remaining chocolate and mix for 20 seconds

     

    on Reverse + speed 3 or until combined.

     

    Add raspberries and fold through mixture for 20 seconds on Reverse + speed 1. Spread

     

    mixture into prepared tin. Mixture is very thick.

     

    Bake for 40-45 minutes or until when tested with a skewer.

     

    Cool in pan before cutting into squares.


Tip

Could use dark or white chocolate if desired.

Dust with icing sugar and serve with a dollop of whipped cream - Delish!
