Ingredients

Chocolate Brownie Mixture

  • 100 grams brown sugar
  • 200 grams caster sugar
  • 250 grams Butter
  • 50 grams cocoa powder, 70% cocoa
  • 150 grams plain flour
  • 1 tbsp vanilla essence
  • 3 eggs, (whisked)
  • 1 pinches salt

Raspberries

  • 130 grams frozen raspberries
  • 1 tbsp caster sugar

Cheesecake Mixture

  • 250 grams cream cheese
  • 40 grams caster sugar
  • 1 egg
  • 1 tbsp vanilla essence

Recipe's preparation

    Preparation
  1. 1. Preheat oven to 160 degrees. Line a slice tin with baking paper.
    2. In a bowl, mix raspberries and 1tbsp sugar. Microwave for 2 minutes. Stir when done and set aside.
  2. Brownie Mixture
  3. 1. Place butter in TM bowl. Mix 3min 50 degrees sp3 (or until melted).
    2. Add sugar and mix 30sec sp3.
    3. Add cocoa, flour, salt and vanilla. Mix 20sec sp3.
    4. Add eggs and mix 15sec sp3.
    5. Place in slice tin and level out
    6. Wash and dry TM bowl.
  4. Cheesecake Mixture
  5. 1. Place cream cheese, vanilla and sugar in TM bowl. Mix 30sec sp3. Scrape sides of bowl.
    2. Add egg and mix 20 sec sp3.5 (or until smooth).
    3. Dollop tablespoons of mixture on top of brownie mixture
  6. Add Raspberry Mixture
  7. 1. Place spoonfuls of rasberry mixture on top of cheesecake dollops.
  8. Finishing Touches!
  9. 1. Run a skewer through the mixture to create a marbled effect.
    2. Place in oven for 40-45min (or until the slice slightly wobbles).
    3. Leave to cool. Place in fridge for a minimum of 2hrs, and serve cold.
    4. Enjoy!

Tip

If you wanted to be a little naughtier, you could add choc chips to the brownie mixture!

    Question-when it says heat oven to 160c, is that applicable to a fan forced oven?
    I never know whether to just do the stated temp in the recipes or 20c cooler.

    Nice one, I was a bit worried at some stage because my dollops and raspberry looked way runnier than in your picture. But it turned out okay. Just had a sneaky bit of the still warm slice and it's yummy. I am sure it will be a hit at work tomorrow.
