  • 90g raw sugar
  • 75g Butter
  • 2 eggs
  • 280g natural yoghurt
  • 30g raspberry jam
  • 1/2 lemon, juice and grated zest
  • 1/2 teaspoon ground cinnamon
  • 380g Self Raising Flour
  • 100g white chocolate, chopped
  • 100g frozen raspberries

Recipe's preparation

  1. Describe the preparation steps of your recipe

  2. Preheat oven to 180 degrees celcius and line a 12 hole muffin tin with foil cases. 

     

  3. Place sugar, butter, eggs, yoghurt, jam, lemon juice and rind and cinnamon in TM bowl and mix on Speed 4, 30 seconds. 

  4. Add flour and chocolate and mix Speed 3, 6 seconds, REVERSE Counter-clockwise operation"Counter-clockwise operation" . Mixture should be just combined, do not overprocess or your muffins will be hard when baked. 

  5. Add frozen raspberries and mix Speed 3, 4 seconds, REVERSE Counter-clockwise operation"Counter-clockwise operation"

  6. Divide mixture between muffin cases, heaping up mixture if necessary to use it all up.  

  7. Bake in centre of oven for 25 mins or until slightly browned. Cooked muffin will spring back rather than sink when lightly pressed in the centre. Cool on wire tray, serve warm or cold. Make great lunchbox fillers.

    This recipe is delish!
    very yummy will make again!
    I didn’t add jam I didn’t have any but
    i added a ripe banana instead, I had sitting there, worked a treat so yummy!

    These are delicious. I didn't use jam as I simply don't eat it but pretty much followed the recipe otherwise. I will definitely make these again.
