Ingredients

Rhubarb Slice

  • 50 g Butter
  • 70 g sugar, (can be substituted for coconut sugar.
  • 30 g Rice malt syrup
  • 1 tsp Vanilla Bean Paste
  • 1 egg
  • 60 g almond meal
  • 60 g almonds
  • 1 tsp baking powder
  • 6 rhubarb stalks

Recipe's preparation

    Filling
  1. Preheat Oven to 200 degrees & line pie tray with baking powder.

     

  2. Place Almonds in TM bowl.  Chop 4 seconds / speed 5. (set aside)

  3. Add Butter, Sugar, Rice Malt Syrup & Vanilla to TM bowl.  

    Melt for 3 mins / 50 degrees / speed 2.

  4. Add Egg, Almond Meal, Chopped Almonds (30g), & Baking Powder.

    Mix Counter-clockwise operation"Counter-clockwise operation" 10 seconds / speed 3.

  5. Pour mixture into tin.

  6. Topping
  7. Sprinkle mixture with rhubarb pieces, reserved chopped almonds & remaining coconut sugar.

     

  8. Bake
  9. Bake in oven for 30 mins.

     

Tip

Serve with ice cream or thick vanilla yogurt.
