  • 150 g water
  • 60 g sugar
  • 150 g honey
  • 3 g Four spice mix
  • 1 lemon zest, zest of whole lemon
  • 2 lime zest, zest of 2 whole lime
  • 1 orange zest, zest of the whole orange
  • 4 g star anise
  • 1 pinches salt
  • 150 g Flour, Plain
  • 5 g baking powder
  • 95 g Butter
  • 1 pinches bicarbonate of soda

Recipe's preparation

    Infusion of the spices and citrus zests
  1. Preheat oven to 180 degrees
  2. To the bowl, add water, sugar, honey, salt. Bring to a boil 5min/100/sp 2. Place simmering basket on the lid instead of the MC
  3. Add four spices mix, star anise and the zests of the citruses.
  4. Add butter. Stir gently with a spatula to make sure all ingredients are submerged.
  5. Let infuse in the bowl for 20 min with the lid on.
  6. Pass the infusion through a sieve and set aside in a separate bowl.
  7. Cake dough
  8. Add flour, baking powder and bicarbonate soda to the bowl.
  9. Add the strained infusion of spices to the bowl.
  10. Mix 10 sec/speed 4.5.
    Scrape down the side of the bowl. With the spatula, make sure no flour is stuck at the bottom of the bowl.
  11. Mix 10 sec/speed 4.5 again.

  12. Mix 10 sec/speed 4.5
  13. Pour batter in a loaf pan lined with baking paper and bake for 40 min at 180 degrees

  14. Let the cake cool down on a cooling rack.

Tip

1. You can eat this cake as is. It's delicious with a cup of tea. Otherwise, here are some serving suggestions:
- with some foie gras as a savoury dish
- cut cake in half and garnish with orange marmelade. The bitterness will balance the sweetness and spices beautifully

2. You can make your own four (even five) spice mix. It will only enhance the flavours compares to store bought mix.

3. You can substitute citruses. For example, you can use zest of madarines, oranges and lemons.

4. You can use butter or any dairy-free butter alternative as long as not strongly flavoured. I personnaly would stay away from coconut oil or olive oil for this recipe.

5. Why not make some marmelade to use your citruses?
