Sourdough starter discard Crepes
- 125 grams sourdough starter discard, (unfed starter)
- 40 grams Butter
- 2 eggs
- 60 grams plain flour
- 180 grams Milk, dairy or plant based
- 30 grams water
- 1 pinches salt

- In a separate jug, weigh together 130g of milk and water and set aside.
- Place butter and remaining milk (50g) into mixing bowl and heat 2 min/70/speed 2.
- Add sourdough starter discard, eggs, flour, salt to the bowl.
Mix 5 sec/speed 6. - Scrape down sides of the bowl. Mix 5 sec/speed 6.
- Remove the measuring cup and start mixing for 12 sec/speed 4.
While the blades are rotating, pour the milk and water mix on the blades. - If necessary, scrape down sides of the bowl and mix for another 3-5 sec/speed 4.
- Let the batter rest for 10 minutes and cook in a non-stick pan on medium/high heat. You shouldn't need to oil the pan.
Tip
This will give about 10 crepes.
Making the batter using this method means that there is no need to let the batter rest for more than 10 minutes.
You're looking for a batter that has got the consistency of pouring cream. So something quite thin.
You can halve or double the recipe.
Enjoy the crepes with a sweet or savoury filling!
Feel free to add to the batter a few drops of vanilla extract or a couple of tablespoon of sugar if having with a sweet topping.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
