  • 50 grams raw sugar
  • 140 grams dates, pitted
  • 45 grams goldern syrup
  • 25 grams water
  • 1/4 teaspoon bicarbonate soda
  • 1 teaspoon Orange rind
  • 255 grams plain flour
  • 165 grams caster sugar
  • 100 grams Butter
  • 1 egg

Recipe's preparation

    Stick Date Cookies
  1. Preheat the oven to 180C and line 2 oven trays with baking paper

  2. Place raw sugar in bowl mill 10 sec/ speed 9, set aside

  3. Put dates in bowl chop 3 sec/ speed 5

  4. Add syrup and water cook  5 min/ 100C/Counter-clockwise operation"Counter-clockwise operation" /speed 1,scrape down sides

  5. Add soda and rind 3 sec/Counter-clockwise operation"Counter-clockwise operation" /speed 3, let stand for 5 min

  6. Process 20 sec/ speed 5, allow to cool

  7. Add flour, caster sugar, butter and egg 10 sec/ speed 5, scrape down side, mix for a further 20 sec/ speed 5.Refrigerate for 30 minutes.

  8. Roll heaped teaspoons of mixture into balls, flattern slghtly.  Place on prepeared trays about 3cm apart

  9. Bake cookies for 15minutes.  Cool on trays then toss in reserved sugar.

Tip

Store cookies in an airight container for up to 4 weeks

    I added chopped fresh ginger to the date mixture, and replaced the caster sugar with panela and the cookies are fantastic, the ginger adds a real kick!

    Its such a sml amount i don't see why not..but in saying that i've made muffins that are 'orange and date' and those flavours go well together..so..i guess you could only give it a go if thats all you have tmrc_emoticons.) good luck!

    Very delicious cookies. The timing may put people off, because you have to wait for the mixture to cool, and then refridgerate for half an hour BUT i made them while i was cooking and then eating dinner so timing was perfect. Will be making again!!!
