- 110 g white sugar
- 2 eggs
- 1 tbsp vanilla extract
- 400 g SR flour
- 300 g Mixed Choc Chips/Smarties/etc.

Preheat Oven, 180C.
Melt butter, 4mins/60C/Sp2.
Add sugars, mix 2mins/Sp4.
Add eggs and vanilla, mix 30secs/Sp4.
Add Flour, mix 1min/Sp3.
Add chocolate chips, etc, and mix through by hand with spatula.
Place teaspoon fulls on baking tray covered with baking paper, allowing room for biscuits to spread. Bake 10-12 mins.

Reduced brown sugar to 100grams and white sugar to 60grams & still sweet enough
Enjoyed by the whole family and makes a huge batch. Only had 180 grams of M&M's and that was still enough.
These cookies are soooooo delicious.
I am terrible at baking and have an oven from ye olde days that burns the bottom out of everything so these cookies are perfect because I wanted soft chewy gooey cookies.
I found that taking them out whilst still soft to touch means the bottom doesn’t burn in my oven and they taste perfect.
I made them to recipe the first time and they are great but i felt a bit sweet so today I reduced the white sugar to about 2/3, kept brown sugar the same and added about 1/4 cup of cocoa to make chocolate ones.
they are also totally yum and I still think I could reduce the sugar even more and they will still be sweet.
this one recipe made about 50 cookies. I do not expect them to last long.

I made half a batch to see how I go..as I e not had much luck with biscuits in my baking career..but these are awesome.
I cut the white sugar a bit and made with white chocolate which made them sweet..
Definitely refrigerate the dough before using..

Not a subway cookie disappointed! The biscuits will get eaten but won't use this recipe again. Does make a big batch. And a previous comment about sticky mixture said to fridge the dough as easier to work with. Agree
I used 80g of white sugar instead of the full amount due to recommendations & the full amount of brown sugar. Apparently these are the ‘best cookies i’ve ever made’. I’m a pretty crappy baker so that’s a win for me. They are a bit crumbly and they rose heaps (SR flour?) and look nothing like subway cookies. But i’ll make them again. Thanks.
