Ingredients

Cake Batter:

  • 100 g almonds
  • 2 oranges, (ideally big, juicy ones)
  • 160 g Butter
  • 200 g raw sugar.
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 160 g plain flour
  • 3 tsp baking powder

Lemon Icing:

  • 1 lemon, (juice and zest)
  • 1 tbsp Butter, melted
  • 150 g icing sugar

Recipe's preparation

    Batter:
  1. 1. Preheat oven to 150C.

    2. Line regular sized cake tin with baking paper.

    3. Place almonds in bowl. Mill 15 secs/speed 9.

    4. Add oranges, tops and tails removed, cut into halves. Skin and all. Blitz 20 seconds/speed 7. Scrape bowl.

    5. Add eggs, sugar, vanilla, and butter. Mix 10 secs/speed 5. Scrape bowl.

    6. Add flour and baking powder, mix 10 secs/speed 5.

    7. Pour into cake tin and bake for 1 hour, or until skewer is inserted and comes out clean.

    8. Wait for cake to be mostly cool before icing.

  2. For the Icing:
  3. 1. Add all ingredients to bowl, mix 15 secs/speed 4. Scrape and repeat if necessary.

    2. Drizzle artfully (?) over your cake tmrc_emoticons.)

Tip

You can probably replace all of the flour with almond meal or other grain free alternatives. 

You could replace the sugar with some kind of sugar alternative.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

    Love this cake. Remove a bit extra pith to limit bitterness and increased the amount of almond meal to flour to reduce carbs.

    this recipe is so delicious. I didn't dare use the peel of the oranges, used more oranges and less sugar, and it turned out beautiful. I covered it with chocolate.

    Kids complained of bitter after taste.  Will try removing skin next time but otherwise very moist and tasty

    A hit at the office. So easy and so delicious. My icing looked nothing like the picture here - still tasted good but my cake was definitely not as pretty as this one!
