Ingredients

for the Loaf

  • 85 g Tasty cheese, cut into cubes
  • 100 g brown onion, halved
  • 400 g zucchini, peeled and cut into rough chunks
  • 3 eggs
  • 90 g bacon, small dice
  • 70 g cream cheese
  • 1 1/2 teaspoon Bi Carb
  • 1 1/2 teaspoon baking powder
  • pinch Salt and pepper
  • 170 g plain flour

Recipe's preparation

    Method:
  1. Preheat oven to 140C. Line your favorite loaf pan with baking paper.

    Grate cheese 2 secs/speed 7. Remove to a bowl for later.

    Place onion and zucchini in bowl and chop 3 secs/speed 7.

    Add all remaining ingredients to bowl, including cheese, and mix 7 secs/reverse/speed 4. Scrape down bowl, and repeat for 2 more seconds if necessary.

    Pour into tin and bake for 1.5 hours, or until loaf springs back to touch.

Tip

Feel free to skip the bacon and replace the cream cheese with yoghurt. Can also use almond meal in place of flour. Other veggies can also be added if desired (within the 400g).

    I love the idea of this loaf but mine was also too wet. Did you squeeze the liquid out of the zucchini before adding remaining ingredients? I really want to nail this recipe! Lol

    Awesome loaf....didnt have quite enough zucchini so added sweet potato (100g) was yummo

  • Just tried this recipe.  Was really pleased to find a savoury one without sugar.  but it turned out quite wet - not sure if 170g is enough flour?  Might be my fault though - I did have a bit more zucchini than the recipe called for. Will try again.

    Oh gee! Thank you for alerting me! I had somehow missed the flour off the recipe. It took so many tries to upload it and I must have typed the ingredient list 3 times. Sorry I missed it. I appreciate your help tmrc_emoticons.)

    The tip  "Can also use almond meal in place of flour" is confusing as there is no flour given in the recipe.
