  • 50 grams raw sugar
  • 75 grams Butter
  • 1 egg
  • 100 grams Maple syrup
  • 230 grams Sweet Potato - Cooked & Mashed
  • 250 grams Self Raising Flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 0.5 teaspoon bicarb soda
  • 1 pinch salt

Recipe's preparation

  1. Preheat oven to 180 degrees.

  2. Place butter and sugar in bowl.  10 Seconds Speed 6.

  3. Scrape down sides of bowl and add the egg, maple syrup and sweet potato.  6 Seconds Speed 5.  Scrape down sides and repeat.

  4. Add the flour, cinnamon, baking powder, bicarb and salt.  10 Seconds Speed 5.  Scrape down sides then 4 Seconds Speed 5.

  5. Drop heaped teaspoons of batter onto a baking tray lined with greaseproof paper.

  6. Bake for 12-15 minutes.  Once cooked remove from oven and move straight to a wire rack to cool.

Tip

The biscuits remind me of honey jumbles/pfeffernusse and are best served the day they are made, however they are fine for days after they just lose the crunch from the top.  They are very mild in flavour (I make them for my toddler) so if you wanted a more spiced version then add 1/2-1 teaspoon of ground ginger when you add the cinnamon.

    '250g' is written where the number of portions should be

    'plain flour' is written in bold before the first ingredient '50g raw sugar' is.

    No just the 250g self raising flour.  I've just re-read the recipe and I can't see where it says both, have I made an error?

    Does this have 250g plain flour +250g self raising flour (Total 500g flour)? The way it's written could be very easy to miss the plain flour-if it's meant to be included.
