Ingredients

Muffin Mixture

  • 500 g Sweet Potatoes
  • 250 g Plain Flour or Gluten Free Flour
  • 2 eggs
  • 100 g water
  • 80 g oil
  • 100 g Maple syrup
  • 100 g brown sugar
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp bicarb
  • 100 g walnuts

Cream Cheese Topping

  • 1 Block Philadelphia Cheese
  • 50 g walnuts
  • 2 tablespoon coconut oil
  • 50 g Maple syrup
  • 130 g icing sugar

Recipe's preparation

    Muffin Mixture
  1. Preheat the oven to 180 degrees

    Grease a muffin tin or line with 12 paper muffin cases

    Place the walnuts in the TM and chop for 3 secs on speed 5

    Set aside

    Peel and cut the sweet potatoes into cubes and place into basket. Cover the bottom of the baske the basket with hot water & steam for 15 mins / varoma / speed 2

    Before removing make sure the potatoes are soft 

    Rince the TM bowl and add potatoes once slightly cooled

    Add to the potatoes 2 eggs, water, oil, syrup, cinnamon

    Mix for 30 secs / speed 5

    Add the flour, baking powder and bicarb

    Mix for 30 secs / speed 5

    Add the chopped walnuts & combine for 5 secs /speed 5

    Fill the muffin cups at least 3/4 full and bake in the preheated oven for 20-25 minutes or until muffins test done

    Be careful not to over bake

     

  2. Cream Cheese Topping
  3. Place the walnuts in the TM and chop for 2 secs on speed 5

    Add the butter & maple syrup and cook for 3 mins / Counter-clockwise operation"Counter-clockwise operation" / speed 1

    Set aside and allow to cool

    Place the philadelphia cheese in the TM with the icing sugar and mix for 10-20 secs on speed 6 or until lovely, creamy and smooth

  4. Final Step
  5. Once the muffins are cool, generously spoon over the cream cheese icing, add some caramelised nuts & drizzle over some maple syrup.

Tip

Sweet potatoes are a great source of Vitamin A & Vitamin C

They are also a great source of antioxidants, anti-inflammatory nutrients and blood sugar-regulating nutrients.

They also contain nutrients like manganese, bitamin B6, tryptophan, potassium and fiber

    There is brown sugar in ingredients but no reference in the method. Also you say coconut oil in icing but mention butter in the method, which is it?
    Oh and what temp do you cook the walnuts, butter (or coconut oil?) And maple syrup
