- 125 grams Butter
- 3 Weetbix
- 150 grams Self Raising Flour
- 85 grams Coconut
- 155 grams brown sugar
- 1/2 teaspoon vanilla essence
Icing
- 125 grams icing sugar
- 30 grams cocoa
- 25 grams Milk
- 25 grams Butter

I'm cooking this todayRecipe's preparation
1. Preheat oven to 180 and line slice tray with baking paper.
2. Add butter - melt 50 sec / 50 deg / speed 4.
3. Add Weetbix - crush 4 sec / speed 5. Scrape.
4. Add rest of ingredients - mix 4 sec / "Counter-clockwise operation" / speed 4. Scrape then 4 sec / "Counter-clockwise operation" / speed 4.
5. Use spatula to sure mixture is well mixed and empty mixture into tray and flatten out.
6. Bake for 12 mins or until golden brown.
7. Allow to cool in tray.
Icing
1. Clean bowl and add all icing ingredients in bowl - 6 sec / speed 4.
2. Spread icing over cooled slice and refrigerate to set.
3. Cut into pieces and store in airtight container.

Tip
Tips: Make sure the mixture at step 5 appears fairly dry and has a rough breadcrumb texture to it. It may appear too dry, but it will come together in the oven. I had enough early failures (pre Tmx) to know! Any more wet ingredients makes the base to hard.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Great recipe, simple and quick. Trusted the recipe and followed exactly, result was perfect.
I added an egg and some chopped dried apricots, just drizzled some melted dark chocolate over the top.
Omg this takes me back to my childhood - the smell of the base cooking is heaven!!!!!
I added one egg and a 1/4 cup of milk and baked for approximately 20minutes. Very nice

This is a winner with the kids, and a great way to use up the weetbix at the end of the packet. I worked out that it is approximately 100grams of Weetbix crumbs. Thank Tracy
