Ingredients

CAKE

  • 175 grams caster sugar
  • 125 grams Butter/Margarine
  • 2 eggs
  • 225 grams Self Raising Flour
  • 30 grams cocoa
  • 20 grams raspberry jam
  • 180 grams warm water

ICING

  • 230 grams icing sugar
  • 30 grams cocoa
  • 40 grams Milk
  • 40 grams Butter/Margarine

Recipe's preparation

  1. 1.  Preheat oven to 190C and line tray/s or insert patty pans (Tip 1)

    2.  Add caster sugar to bowl and blitz 10 sec/sp 10 then scrape.

    3.  Add butter and mix 40 sec/sp 4.

    4.  Add eggs and combine 15 sec/sp 4, scrape and then 5 sec/sp 4.

    5.  Add remaining ingredients and combine 20 sec/sp 4, scrape then 5 sec/sp 4.

    6.  Make sure mix is combined and put in the tray/s.

    7.  Bake cupcakes for 12 mins, sandwich tins 14 mins, or deep tin 25 mins (Tip 2).

    8.  Allow to stand for about 5 minutes then transfer to wire rack.

    9.  Insert all icing ingredients into clean bowl and mix 20 sec/sp 6. (Tip 3)

Tip

Tips:  1.  This is an 8" recipe, to be used for a 8" round tin, 2 x 8" round sandwich tins, or 15-20 cupcakes.  2.  Check a minute or two before the end to see if cooked.  You only want this just cooked.  3. Icing mix will cover the cakes, but may be more than needed for cupcakes, depending on thickness.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

    I made these the night before my daughter's birthday party.  The comment from the tweens were, these are great, the best cupcakes I've had, they were nice and moist.  I used Strawberry jam as we had no raspberry but doubt it would make a differenc.  Thank you for sharing your recipe

    just made these and they are delis!!! kids loved them too, and perfect for a child who is allergic to dairy, i just used dairy free marg and they turned out perfect! havnt iced them yet, but have a feeling they will be all gone before i get a chance thanks for the recipe!

    Had to make a quick 35 cupcakes for my son to take to school on his birthday - made double this mix and struggled to part with them.. just delicious! I didn't bother with the icing but the cakes themselves were heavenly (and so quick and easy) thanks for the recipe! tmrc_emoticons.)

    Perfect perfect perfect!!!

    Thank you so much for sharing - up until now I never used my thermi for baking but this recipe is so light and delicious!

    I used strawberry jam because I didn't have raspberry and it was soo yum!
