Ingredients
DOUGH
- 250 g Milk
- 4 teaspoon dried yeast
- 60 g Butter
- 1 teaspoon lemon essence
- 80 g white sugar
- 1 egg
- 500 g plain flour
- 1 teaspoon salt
- 1.5 teaspoon mace
- 60 g sultanas
STREUSAL
- 180 g Butter, chopped
- 150 g white sugar
- 250 g plain flour
- 1/2 teaspoon cinnamon
- 1/2 teaspoon Nutmeg
- 1 teaspoon vanilla essence
- 4 tablespoon cream

Place milk, butter, yeast, lemon essence and sugar into mixing bowl and warm 5 mins / 37 degrees / Speed 1
Add egg 6 seconds/ Speed 5
Add flour, mace and salt 6 seconds / Speed 5
"Dough mode" 1 min 30 seconds
Turn onto ThermoMat and knead in sultanas
Allow to prove for 30 mins
STREUSAL
Place all streusal ingredients (apart from the cream) into bowl and mix until crumbs are formed 30 seconds / speed 5, repeat if required. Add extra flour to streusal mixture as required to form crumbles.
DOUGHAfter dough has proved, softly knead and place cake dough on a slide 38cm x 29cm. Use Bakers Paper or brush tray with Copha. Allow to prove for 20 minutes on tray.
Brush cake with cream (or egg white can be used). Generously spread Streusal Crumble on top.
Place in cold oven on 180 degrees celcius and bake 25 - 20 minutes until golden brown.
Allow to cool and dust with icing sugar.
