Ingredients
- 125 grams Butter
- 1/2 teaspoon vanilla essence
- 250 grams brown sugar
- 1 eggs
- 1 cup plain flour
- 1/4 Cup Self Raising Flour
- 1 teaspoon bicarbonate soda
- 1/3 cup cocoa
- 95 grams Nestle milk chocolate melts
- 75 grams Nestle white chocolate melts
- 75 grams Nestle dark chocolate melts

Place butter, essence, sugar and egg into bowl mix speed 3 for 1 minute.
Place remaining dry ingredients except chocolates into bowl mix speed 4 for 40 seconds.
Break melts into halves, place in bowl and combine on "Counter-clockwise operation" , 30 seconds speed 2.
Using a tablespoon, scoop mixture into spoon, roll into balls, place onto baking tray lined with baking paper.
Bake in preheated 190 degree oven for 10 mins, pull out and rest for 5 minutes
Tip
You can use the chic chips instead of melts, I like the melts cause it gives it that chunk of chocolate.
For a firmer cookie bake for an additional 2 minutes.
For a different taste/texture add 85 grams of sultanas as well. Dissolve a tsp coffee in a bit of hot water and add for a different flavour
