  • 200 g caster sugar
  • 200 g Self Raising Flour
  • 4 medium eggs
  • 1 teaspoon vanilla extract

Recipe's preparation

  1. Preheat oven to 180 degrees C and line patty pans with cupcake cases (or line 8" baking tin). 

     

    2. Place butter and sugar into TM bowl and mix for 30 seconds on Speed 5.  

     

    3. Add eggs one at a time (at 10 second intervals) to ensure that each egg has been incorporated.

     

    4. Put in Butterfly - add vanilla and then flour one tablespoon at a time (through hole in the lid) every 5 seconds until all flour is mixed in and batter is thick and fluffy. 

     

    5. Spoon cake mixture into cupcake cases (fill cases only 3/4 full).  Bake at 180 degreesC for 12-15 minutes.

     

    Note: Makes 30 (patty pan sized) cupcakes or one 8" cake.  For 8" cake - test centre of cake with skewer - cake  is ready if skewer is clean on removal.

     

     

     

     

     

     

     

     

     

     

     

     

     

Tip

You can add cocoa to this recipe if you like.  If you put in 20g cocoa then reduce the flour by that amount.  OR if you have some chocolate ganache sitting around in your fridge, bring it to room temp and add one dollop of it into the mix in between adding the flour!

    Thanks, lovely cupcakes. Had to work out parts of the recipe myself as no speed etc for eggs or mixture but I just guessed it and turned out fine, thx tmrc_emoticons.)

    Beautiful!!!  An absolute hit!!  Everyone loved them - so moist.  This is now my go-to vanilla cupcake recipe.  I doubled the quanity & worked perfectly.

    Thanks for the comment Belinda.  I would have used a teaspoon to put the cake mix into the cases.  Also I have found that when you put cake mix into a tin or cases, you need to bang the tray/tin before putting in the oven.  Then ensures even baking.  You can reduce the sugar content also  - tweak it to suit.

    I have just tried this recipe and I'm in two minds about it.  I halved the ingredients because I wanted to make mini cupcakes.  The texture of the mixture made it difficult to put in the patty pan and a result the underneath of the cupcakes were all uneven.  Having said that, they tasted great.  I'm not sure if I will make them again as they are not exactly the most healthy option for the kids .

    I have amended the recipe...forgot to add the vanilla so hoping you reaslised that!  They should still turn out fine.  Please let me know what you think.  My family and friends love them and I make them often for any special occasion!   You can reduce the sugar content in them too if you like - I tend to put in 150g and they still turn out scrummy.  Can be addictive!!
