- 2 Medium Eggplants
- 3 cloves garlic, peeled
- 1 heaped tablespoon tahini
- 1 teaspoon Himalayan Pink Salt (or to taste)
- 2 tablespoons olive oil

Blister eggplants on top of the stove over naked low flame (to smoke and cook eggplants). Once skin starts to break and soften place them in a bowl of cold water. Remove the skin (the cold water makes it easy for the skin to come off). Set aside.
Place garlic into TM bowl with MC in place and blitz on sp 7 for 3 seconds. Remove the lid and scrape garlic down into the bowl.
Add the eggplants, tahini, salt and olive oil and blend for 10 seconds on speed 6.
Serve with fresh Mountain Bread as a dip or use as a spread on the mountain bread and fill with roast chicken, spinach and grated carrot for a quick healthy snack.

Do you u use Tahini paste or Made up tahini please?
I read the comments below, roasted the eggplant and garlic cloves at the same time in the oven (garlic only needs a couple of mins) and finished off as per recipe. perfect.
Simple and tasty! I'll roast or saute the garlic next time though as the variety of garlic I purchased was quite overpowering raw.

Excellent recipe. I simply bake the eggplant whole in the oven and then spoon out the soft juicy contents into the thermie to combine with the other ingredients. Literally seconds to make a delightful starter, accompaniment or snack.

This was super easy to make. I cooked my eggplants on a BBQ hotplate becasue I don't have a gas stove top. I also found it much easier to cut my cooked eggplants down the centre and scrape out the flesh with a spoon.
