Recipe's preparation

    Lemon or Orange Curd
  1. 1. Place Lemon or Orange zest in bowl along with sugar and mill together for 10 seconds/Sp10. Push sugar and zest down into the bowl and repeat.
    2. Add cubed butter and chop for 5 seconds/Sp6.
    3. Next add Eggs, Egg Yolks and Juice and cook for 12 mins/80 degrees/Sp5.
    4. Clean sides of the bowl and cook for another 3 mins/90 degrees/Sp 5.
    5. Pour into sterilised glass jars when done. Makes approximately 600g.

Tip

The recipe above is the same for Lemon Curd or Orange Curd. I have put both in the ingredients list. However if making Orange Curd, if you have small Oranges use 4 for the zest. If large Orange is used then 2 is sufficient.

This is a really creamy curd and can be dolloped in tart cases, buttercream for cakes, stir through vanilla ice cream or vanilla yoghurt.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     I have just made this orange curd. Problems zest is way too much, it’s presenting as uncooked grainy mouthfeel for the zest, it’s much too sweet and looks overcooked and that’s before before zapping the mix at 90°. It’s thick and looks lumpy because of the overcooking probably. As egg white cooks at 80° this is probably the issue. Needs a better balance of acid to sweet imho. Sorry to give this a negative review but it just didn’t work for me
