Ingredients

"Vanille Kipferl" German Christmas Shortbread

  • 120 grams almonds, raw, with skin
  • 200 grams Butter, cubed, cold but not straight out of fridge
  • 80 grams raw sugar
  • 2 egg yolks
  • 1/2 teaspoon Vanilla powder
  • 270 grams Plain flower
  • 1 pinch salt
  • 100 grams raw sugar
  • 1/2 teaspoon Vanilla powder

Recipe's preparation

    How to make the best christmas biscuits ever:
  1. Add Almonds to Mixing bowlClosed lid"Closed lid" and mill 10 sec sp 9. Put aside
    no need to clean bowl
    Add 80g raw sugar to Mixing bowlClosed lid"Closed lid" and mill 10 sec sp10
    Add reserved Almonds, Flour,Salt, Vanilla powder, Butter and Egg yolks to Mixing bowlClosed lid"Closed lid"
    mix for 10 sec sp 6
    then
    30 sec on dough mode Dough mode"Dough mode"
    repeat if needed
    Dough will appear crumbely
  2. transfer on to Baking mat and or lightly flouered surface and work into a ball, flaten the ball a little and wrap in Mat or put into airtight container and place in fridge to rest for at least 2 hours.
  3. In the meantime add remaining 100 grams of raw sugar to Mixing bowl Closed lid"Closed lid" and mill 5 sec sp 10 then transfer in to a bowl or jar with lid, add vanilla powder and shake until well combined.
  4. Preheat oven to 180 degrees

    line 2 baking trays with baking paper

    Take the dough out of the fridge and break up a smaller piece at the time rolling 1 cm thik sausages and shaping them in roughly 4-5 cm long half moons. then place on baking trays

    The dough is best to work with cold, if it gets to warm it might start to cumble or fall apart a little when rolling.

    bake for 10-15 minutes or until lightly browned

    take out of oven and let cool only a little so you can touch

    roll every "Kipferl" in the vanilla sugar and then store in airtight container

Tip

I prepare my dough the night before and store in fridge over night

It will last in the fridge for at least 3 days

When I roll my Kipferl I only take half of the dough out of fridge and get more once finished shaping

I buy my vanilla powder at a health food store. The taste is intense and the little jar lasts a long time...alternatively you could make Vanilla sugar but I only make mine with the powder

    I made these exactly to recipe and were delicioius. You can also coat them in vanilla icing sugar.
