put all ingredients into mixing bowl and mix for 20sec speed 10
use hands to roll into bite sized balls
and coat in desiccated coconut
store in airtight container in fridge
Small apricot balls with vanilla
Tip
Replace almonds with seeds (sunflower etc.) to make
it a great lunch box treat

So yummy and easy! Made for Christmas gifts. We love these way better than bought muesli bars. I used vanilla essence, no problems.
Can you use vanilla essence instead of paste?

Simple to make and delicious! Taste just like apricot logs. I only had 200g of dried apricots, and I used rice malt sryup instead of maple syrup as I had some in the fridge that needed to be used. I also added 1 tablespoon of coconut oil. Thanks for the recipe!

i added 1 tbsp of coconut oil and extra coconut to the mix
I made a slice instead of balls cos I couldn't be bothered rolling them
I used shredded coconut on the top
